Construx Co. Delivers Three New Insomnia Cookies Locations Across the Northeast

Construx Co. recently completed three new locations for Insomnia Cookies, the nationally recognized late-night bakery brand known for serving warm cookies, ice cream, and desserts to college towns and downtown neighborhoods across the country. Leading this portfolio is Construx’s largest build for the brand to date in Stamford, a 1,515-square-foot space designed to support high-volume service while delivering a welcoming, energetic retail experience. With demolition already completed prior to mobilization, the team was able to accelerate construction and quickly move into the full fit-out.

The transformation preserved the existing marble façade while introducing a distinctive split-level ceiling at the entry that creates immediate visual impact. Construx also installed a new bathroom and completed comprehensive front- and back-of-house construction, including kitchen and prep areas, service counters, and durable finishes throughout. Delivered on an accelerated timeline, the project opened before New Year’s Eve 2025.

Additional Insomnia Cookies projects further demonstrate Construx Co.’s adaptability across different footprints and markets. In Durham, NH, the team completed a 1,190-square-foot location in the historic university downtown — one of Construx’s first builds in New Hampshire — featuring a full fit-out and new black-out window film. Meanwhile, the compact 747-square-foot shop in West Hartford required careful coordination due to delays in securing permanent power and a transformer, but construction progressed steadily. That project included renovation of the existing bathroom and rerouting plumbing to improve accessibility and long-term function ahead of its March 2026 opening in West Hartford Center.

Across all locations, Construx delivered complete restaurant environments that align with Insomnia’s signature brand standards, including fully equipped back-of-house kitchens with walk-in freezers and warming ovens, service counters with integrated ice cream stations, penny tile feature walls, Insomnia purple paint, FRP wall systems, ACT ceilings, and grease trap upgrades to meet local code requirements.
